A wafer needs a (natural!) binder to hold together underwater, and starch does that job exceptionally well. During development, we purchased commercial extrusion equipment like many large fish food manufacturers use. After working with it, we realized those machines often force you to formulate foods around the manufacturing process rather than around the ingredients. So we went a different direction.\u003c\/p\u003e\n\u003cp\u003eInstead of extrusion, we hand-fill each batch into molds and slowly dehydrate it at low temperatures. The wafers aren't perfectly uniform, and that's exactly how we like it. You'll notice a rougher texture designed to encourage natural grazing behavior, along with wafers in different sizes because fish aren't equally hungry every day.\u003c\/p\u003e\n\u003cp\u003eWe know there are cheaper foods on the market. We know there are prettier wafers on the market. Our goal wasn't to make the most \"this is mass produced in a giant factory\" wafer.
